Healthy Granola Recipe

I wanted to share with you today a healthy granola recipe that is easy to make and truly delicious! Since a few weeks ago I've been trying to cook healthier options to get rid of a few extra pounds that are refusing to go away. In general we already avoid processed foods at home, sugar and deep fried items, but we're trying to reduce carbs throughout the day and increase the intake of “super foods”.

Granola is already considered by many to be a healthy option for breakfast. But what happens with many of the granolas we found in the supermarket is that they have too much sugar (in the form of honey, agave or maple syrup), sunflower oil and preservatives so that they have a longer shelf life. So, I decided to prepare this healthy granola recipe at home with less sugar, preservative and oil (or even olive oil).

Even though granola is a healthy food it is high in calories due to the presence of nuts. So, consume it moderately.

This healthy granola recipe can be modified according to your taste. If you prefer more almonds than walnuts or you're not a fan of cashews just alter the quantities.

Granola recipe
Ingredients
  • 100g of jumbo rolled oats
  • 85g of raw nuts of your preference (I used almonds, cashew and walnuts)
  • 15g pumpkin seed
  • 25g pitted dates
  • 2 tablespoons maple syrup or honey
  • 1 pinch of salt
  • 1/2 teaspoon cinnamon powder
Preparation
  1. Simmer the dates in 1 cm of water in medium heat for 5 minutes or until they are soft. Blend it with a hand mixer until smooth. Add the maple syrup, the cinnamon and the salt. Mix the cream with the dry ingredients.
  2. Line a tray with parchment paper and spread the granola on top. Bake in the preheated oven at 160C for 15 minutes. After that, stir and reduce the temperature to 110C for more 20 minutes or until golden brown.
  3. Cool and store in glass jars. Serve it with milk, fruit or yoghurt and enjoy!
