The weekend was cold and rainy here and then took the opportunity to review some books and recipes that wanted to do for a while, chose this, modified some things and voilá!! At the end of the day had delicious cookies, homemade and stuffed with hazelnut cream.

Cocoa Wafers with Hazelnut Cream
Ingredients
    For crackers:
  • ½ xic tea coconut oil
  • 100g coconut sugar
  • 140g gluten-free flour
  • 1 tbsp of corn starch
  • 2 tbsp cocoa
  • 2 yolks
  • For hazelnut cream:
  • 250gr hazelnuts
  • 4 tbsp cocoa
  • 4 tbsp. honey
  • 5 tbsp vegetable milk (Coco, rice, almonds, quinoa)
  • 1 tbsp coconut oil
Preparation
    For crackers:
  1. In a bowl mix all ingredients until a homogeneous mass. If you need, add a little more coconut oil. Cover the dough with plastic wrap and refrigerate for 30 minutes. Preheat oven to 170.
  2. Cover a baking sheet with parchment paper and place the balls of desired size for cookies. Axis por 10 minutes approximately. Let cool and then just fill. I used homemade hazelnut cream, but can use jelly, peanut butter ganache or that will also be fine!
  3. For hazelnut cream:
  4. Place the hazelnuts on a baking sheet and bake in preheated oven at 170 for 20 minutes or until crust is released. After, clean hazelnuts and soak for half an hour. Place all ingredients in processor and beat well until a very creamy paste. Fill the biscuits and delight!
  5. I did a larger amount of cream and put in a glass jar with lid, I leave in the fridge for when it hits sweet will, gives to eat with fruit, pancake and even pure, love it! Who is used to the Nutella will wonder why only like the same hazelnuts. This homemade version is much less sweet and more natural, without any preservative.
